About Me
Nicole's Story
Nicole grew up in the stunning village of Howth, Co. Dublin.
Howth offers a wide diversity of terrains from coastal salt marshes, woodlands, meadows to cliff paths and heathlands.
Nicole began foraging as a young child with her Mum and Grandparents. Collecting wild berries, nettles and wild garlic in her childhood, her love for foraging and food began.

A qualified chef for almost thirty years, Nicole ran her own food businesses for the best part of her adult life, managing successful restaurants and most recently her own Artisan food production company, Howth Cuisine.

Travelling to the Indian Himalayas, the Alps, Portugal, most of Europe and all over Ireland, Nicole loves to go foraging for medicinal, culinary plants and fungi. Guided by the elder locals in the Himalayas she now has a vast amount of knowledge on plants used in Ayurvedic medicines.
In 2018 she set her sights towards setting up Howth Foraging. Nicole went on to study Diet and Nutrition, Horticulture and Herbalism, she incorporates all her skills on the foraging tours and events.
